If you buy fresh Truffles, you'll need to look after them. Showing a bit of love for your fresh Truffles will keep them at their best and extend their life. Take a look at our Truffle blog post above (in the Advice section), for some guidance on looking after your fresh Truffles.
Currently we have fresh Black Winter Truffles, and White Winter Truffles available. However, the recipes and ideas below will work with any seasonal variety of Truffle
Add small dollops of our Olive & Truffle Tapenade, Minced Truffle, or Porcini & Truffle Sauce over a Bianci Pizza, topped with Teleggio a before cooking in the oven.
+ Combine White Truffle Cream with the herby Bechamel sauce before adding your toppings. Sprinkle Truffle Dust over the crust, and even add a drizzle of Truffle Honey around the outside. I guarantee this will be the best pizza you've ever eaten!
+ Cheat and add the suggestions above to a good quality shop-bought or frozen Pizza!
Truffle Mash - Mix Minced Truffle through your fluffy, buttery mash. Season with Truffle Salt.
Truffle Dauphinois / Gratin - when making your garlicky, creamy sauce, add a few tablespoons of minced truffle, and swap your regular salt for Truffle Salt, or Dust.
+ Replace 40% of your butter or cream, with a few tablespoons of White Truffle Cream to take it to a new level of cheesy richness
Truffle Fries - cover your crispy fries with Truffle Dust or Truffle Salt, Truffle Oil, and grated Parmesan.
Start with a pack of our wonderful Truffle Tagliatelle (or you can use any pasta or spaghetti). Cook as per instructions in a salty bath.
Add any of the following:
Season fried or poached eggs with our Truffle Salt, or sprinkle over Truffle Dust or Earth once cooked.
For scrambled eggs, mix in to the whisked eggs, some of our Minced Truffle, before cooking. Serve on crusty,buttery, toasted sourdough.
+ Make it Mediterranean magic with a tablespoon of our Olive & Tapenade, or our Truffle Pesto, and some roasted vine-tomatoes

Follow your recipes and add a tablespoon of Minced Truffle before dolloping, smearing over burger buns, alongside truffle eggs, steak, or to accompany any other savoury creation.
+ If making your condiment from scratch, replace regular oil with one of our Extra Virgin Truffle Oils, to super-charge your truffle condiment!
Prepare your Lasagne following your recipes, but replace at least one layer of your Bechamel sauce with our White Truffle Cream - a decadent, airy, smooth Truffle and Cheese Cream Sauce that will take your Lasagne out of this world
+ Top with cheese, breadcrumbs and dollops of Minced Black Truffle before finishing under the grill for an indulgent, crunchy topping.
Cook a prime steak to your liking, seasoning lightly with our Truffle Salt. Once rested, sprinkle over our Truffle Dust, or the more textured Truffle Earth, for an additional dimension.

Blend a high quality butter with approximately 5g of Truffle Dust (powder), or Minced Truffle. Use as a basis for glorious sauces, melt and baste Lobster, White fish, fresh Prawns, New Potatoes, Cabbage, stuff under the skin of a whole Chicken before roasting, or use to poach eggs
+ The butter above has been smothered with fresh Truffle (Melanosporum) for ultimate decadence
Exactly as it sounds... replace regular Honey with our Truffle Honey when glazing your Ham
+ Serve with a dollop of Truffle Mustard (recipe above)

Both Spring and Autumn offer black Truffles and white Truffles that have loads of flavour and perfume, at a very reasonable cost. Summer brings black summer Truffles with the most subtle nutty, caramel flavour and aroma, and are the least expensive.
