Fresh Italian Black Summer Truffles (Tuber Aestivum / “Scorzone”)



Stunning fresh Italian Black Summer Truffles; hunted wild and exclusively for us from the roots of some of Europe’s oldest trees in Umbria and Tuscany.

They have a far milder flavour and aroma than the autumn and winter varieties of black truffle, but have a subtle, delicate nutty characteristic and delightful crunchy exterior. This makes them perfect for shaving generously over hot, savoury, starchy, buttery, or cheesy dishes. Use liberally through salads this BBQ season – a lovely earthy counter balance to bitter leaves, or a sharp dressing.

Caring for Black Summer Truffles 


Remove them from the vacuum sealed packaging. Black Summer Truffles need to breathe. Meaning the poor things will suffocate if kept in this sealed packaging for more than two days. However, Fresh Black Summer Truffles (Tuber Aestivum) will last up to 14 days if cared for and stored properly.

Store air-tight, sitting on and surrounded by paper towels. Keep below 6 degrees. Allow the fresh truffles to breathe and air dry for 30-60 mins each day, and change the surrounding paper daily, to ensure the fresh truffles are kept dry.

Do not store your fresh truffle with rice as this will draw the flavour and aroma from the fresh truffle.
