Black Autumn Truffles (Tuber Uncinatum – sometimes called “Burgundy” Truffles) have a lovely nutty, earthy and mushroomy aroma with hints of warmth and chocolate. Their caramel flavour has hints of garlic, hazlenut and woodland musk.

The interior is usually a caramel to milk chocolate colour. The surface of the fresh Black Autumn Truffle is brown to black with small pyramidal protrusions and craters. Beautiful to behold. This hard exterior can be removed with a pairing knife, as it can be slightly bitter but this is not necessary when shaving or grating. Grate or shave fresh Autumn Truffles as thin as possible over hot, buttery, savoury autumnal dishes. Dairy, mushrooms, carbohydrate, and white meat are all delicious pairings.
