White Spring Truffles (tuber Borchii, aka “Bianchetto”) are smaller truffles and vary in colour from pale cream to golden brown. They have an intense garlic aroma.

Black Summer Truffles (tuber Aestivum, aka “Scorzone”) have a pale creamy interior; are mild and nutty, with notes of caramel.

Black Autumn Truffles (tuber Uncinatum aka “Burgundy” truffles) have a chocolatey coloured interior. They are aromatic, with an earthy perfume of hazlenuts, garlic, and woodland musk.

Black Winter Truffles (tuber Melanosporum, akd “Perigord”) are deeply aromatic and heady. They have a black interior, with strong notes of chocolate, molasses, red fruit and the smell of the forest after a heavy rainfall.

White Winter Truffles (tuber Magnatum Pico, aka “Alba” truffles) are the most boisterous and powerfully aromatic. They are the rarest of all truffles and the most expensive.
