Siberian Sturgeon Roe | Delicate, Creamy Pearls | Refined & Versatile
Description
Baerii Caviar – Acipenser baerii
Buy Baerii Caviar from the roe of the Siberian sturgeon (Acipenser baerii). Caviar lovers prize Baerii for its small, dark pearls, delicate texture and beautifully balanced flavour.
Baerii typically produces smaller pearls, ranging from charcoal grey to deep ebony. The pearls have a firm yet delicate texture. As a result, they provide a gentle pop before releasing their creamy flavour.
How Does Baerii Caviar Taste?
Our Baerii Caviar has a creamy, buttery and subtly nutty flavour. Gentle salinity and delicate marine notes provide balance. Its clean, smooth character then develops into a pleasant, lingering finish.
In addition, its balanced flavour makes Baerii particularly versatile. It’s an excellent introduction for those discovering caviar for the first time. However, it still offers plenty of character and complexity for experienced caviar lovers.
Sustainably Farmed in Poland
Specialist sturgeon farms across Warmia, Kujawy and Greater Poland sustainably raise the Siberian sturgeon used for our Baerii Caviar.
These modern aquaculture facilities sit among meadows, forests and the post-glacial landscape of Poland. They benefit from clean artesian waters and natural river flows, including waters associated with the Łyna River.
The farms lie within the environmentally rich region often referred to as the “Green Lungs of Poland”. In addition, areas of the surrounding landscape have protection through the Natura 2000 network.
These carefully managed conditions provide an excellent environment for sturgeon aquaculture. Moreover, the farms place quality, sustainability and fish welfare at the heart of production.
Caviar specialists carefully select each batch for the quality, size, texture and flavour of its pearls. The producer then packs and transports the caviar under strict temperature-controlled conditions.
Once received, we store each batch at approximately 2°C to protect its quality and freshness. Before dispatch, we hand pack and check every order.
Finally, we send your caviar chilled in our double-insulated thermal packaging with ice packs. This helps maintain the cold chain until it reaches you.
How to Serve Baerii Caviar
For the purest experience, serve Baerii Caviar well chilled. Enjoy it directly from the tin using a mother-of-pearl spoon.
Alternatively, serve it with simple accompaniments such as blinis, crème fraîche, eggs or warm buttered potatoes. Its balanced flavour and smaller pearls also make Baerii an excellent choice for canapés and elegant finished dishes.
For drinks, Baerii pairs particularly well with Champagne or well-chilled vodka.

fantastic caviar. Better than N25, petrossian and exmoor caviar. The eggs were firm and shiny and it felt fresher than those other brands.
