The best of all fresh Black Truffles. These fresh Black Winter Truffles (aka “Perigord” Truffles) have a dark Gleba (marbled interior) and a deeply intense perfume and flavour. Therefore, they are the most prized by Michelin chefs; for their incredible taste and aroma. This variety of fresh truffle bring a huge depth of flavour and umami hit. They are amongst the best, strongest and most truffley variety of fresh truffle. Black Winter Truffles are complex, with savoury, chocolate and liquorice notes. This results in huge versatility and means they pair well with almost any savoury, dairy, or starchy dish.
Our European fresh Black Winter Truffles are available December through to the end of February in Europe depending on the seasons and weather.
Our Black Winter Truffles are sourced from secret locations in the mountains of Eastern Spain.
The surface of the truffle is black with small pyramidal protrusions and craters. Stunning.

Caring for Black Winter Truffles
BEFORE ANYTHING ELSE
When you receive your fresh truffles; remove them from the vacuum sealed packaging.
Truffles need to breathe. The poor things will suffocate if kept in this sealed packaging for more than two days. However, Fresh Black Winter Truffles will last up to 14 days if cared for and stored properly, although the aroma and flavour will gradually dissipate. Store them air-tight, sitting on and surrounded by paper towels. Keep them below 6 degrees. Take them out of the box, and change the surrounding paper daily, to ensure they are kept dry and natural gases can dissipate.
All our fresh truffles are delivered in specialist insulated packaging. This ensures they maintain a constant low temperature and they arrive to you as fresh as possible. We suggest that you do not store your fresh truffle in rice, as this will draw the aroma and flavour from the fresh truffle.
