We source our fresh English Black Autumn Truffles wild from three counties in England: Wiltshire, Hampshire, and Dorset. Our team of dedicated truffle hunters forages them from secret woodland locations, delivering to us several times per week for peak freshness.

Black Autumn Truffles (Tuber Uncinatum), often referred to as Burgundy Truffles, boast a nutty, earthy, and mushroomy aroma with subtle notes of warmth and chocolate. Their rich caramel flavour carries hints of garlic, hazelnut, and woodland musk, making them a luxurious addition to seasonal dishes.

The truffle interior typically ranges from caramel to milk chocolate in colour. The exterior appears brown to black, covered with small pyramidal protrusions and natural craters—beautiful and distinct. While you can remove the slightly bitter outer layer with a paring knife, this step isn’t necessary when shaving or grating.

For best results, grate or shave fresh Autumn Truffles as thinly as possible over hot, buttery, savoury dishes. They pair beautifully with dairy, mushrooms, carbohydrates, and white meats.

How to Store and Care for Fresh English Black Autumn Truffles

Step 1: Unpack Immediately

Remove your fresh truffles from the vacuum-sealed packaging as soon as they arrive.

Truffles are living fungi, which means they need to breathe. If left in sealed packaging for more than two days, they will begin to spoil due to lack of air circulation.

Step 2: Proper Storage

Place the truffles in an air-tight container lined with dry paper towels. Store them below 6°C, ideally in the fridge. Allow the Truffle to air-dry each day, ensuring all surface moisture has evaporated. Replace the paper towels daily to keep moisture levels down and ensure the truffles stay dry and fresh. If cared for properly, fresh English Black Autumn Truffles can last up to 10 days.

Pro Tip: Never store fresh truffles with rice. Although it’s a common myth, rice will actually draw out their delicate aroma and flavour.
