Our fresh Italian Black Autumn Truffles are sourced wild from the hills of Tuscany, and delivered to us several times per week.

Black Autumn Truffles (Tuber Uncinatum – aka “Burgundy Truffles”) have a lovely nutty, earthy and mushroomy aroma with hints of warmth and chocolate. Their caramel flavour has hints of garlic, hazlenut and woodland musk.

The interior is usually a caramel to chocolate colour. The surface of the fresh Black Autumn Truffle is brown to black with small pyramidal protrusions and craters. Beautiful to behold. This hard exterior can be removed with a pairing knife, as it can be slightly bitter but this is not necessary when shaving or grating. Grate or shave fresh Autumn Truffles as thin as possible over hot, buttery, savoury autumnal dishes. Dairy, mushrooms, carbohydrate, and white meat are all delicious pairings.

Caring for your fresh Italian Black Autumn Truffles

BEFORE ANYTHING ELSE – Remove them from the vacuum sealed packaging.

They need to breathe and will suffocate if kept in this sealed packaging for more than two days. Fresh Black Autumn Truffles will last up to 14 days if cared for and stored properly. Store them air-tight, sitting on paper towels. Keep below 6 degrees. Allow the fresh truffles to breathe, and change the surrounding paper daily, to ensure the fresh truffles are kept dry.

All our fresh truffles, including these black truffles are delivered in specialist insulated packaging. This maintains a constant low temperature. This ensures they arrive to you as fresh and aromatic as possible.

We suggest you do not store your fresh truffle with rice. This will draw the flavour and aroma from the fresh truffle.
