Description
English Fresh Black Autumn Truffles – Tuber uncinatum
Buy English Fresh Black Autumn Truffles (Tuber uncinatum), also known as Burgundy Truffles. Our truffle hunters find them wild in woodlands across Wiltshire, Hampshire and Dorset.
During the season, we receive several deliveries each week. This regular supply allows us to offer genuinely seasonal English truffles with excellent aroma and flavour.
What Do English Black Autumn Truffles Taste Like?
Black Autumn Truffles have a rich, earthy and nutty flavour with notes of chocolate, hazelnut and garlic. Their aroma also has a distinctive woodland character.
Their flavour is deeper than the Black Summer Truffle but more delicate than the Black Winter Truffle. This makes them particularly versatile in the kitchen.
They pair beautifully with eggs, pasta, risotto, potatoes, mushrooms, cheese and cream. In addition, they work particularly well with white meats and simple autumn dishes.
For the best flavour, add fresh truffles towards the end of cooking. Alternatively, shave them generously over the finished hot dish just before serving.
What Do Black Autumn Truffles Look Like?
The exterior is typically dark and firm with a textured, slightly rough surface.
Inside, the flesh can range from caramel to deep chocolate brown, depending on maturity. Fine pale marbling runs throughout the interior.
The firm outer skin can sometimes have a slightly bitter character. Therefore, you can trim it lightly before use if preferred.
When Are English Black Autumn Truffles in Season?
The English Black Autumn Truffle season typically runs from September until December.
Their aroma and flavour develop naturally as the season progresses. As a result, individual truffles can vary slightly in colour, aroma and intensity.
How Much Fresh Truffle Do I Need?
As a guide, allow approximately 5–10g of fresh truffle per person. The ideal amount depends on the dish and your preferred intensity.

How to Store English Black Autumn Truffles
Remove your truffles from their vacuum-sealed transit packaging as soon as they arrive.
Place them in an airtight container lined with dry absorbent paper. Then store the container in the refrigerator below 6°C.
Briefly open the container each day to allow the truffles to air-dry. Replace the absorbent paper daily to help control excess moisture.
For full storage advice, read our Guide to Caring for Fresh Truffles.
For the best aroma and flavour, enjoy your truffles as fresh as possible. When stored correctly, they can remain in good condition for up to 10 days after arrival.
Individually Checked & Graded
We individually check and grade every fresh truffle before dispatch. We assess its aroma, appearance and overall quality. We also remove any small imperfections where necessary.
Because truffles grow naturally underground, minor nicks, notches, small cuts or surface marks can occur. These are normal and do not affect the truffle’s freshness or flavour.

Never tried truffles before, bought these for a family gathering – we sliced/grated them over home-made chuck and bone marrow burgers. I also grated some into my husband’s mac’n’cheese.
